I’ve been reading a book called Four Fish lately. It’s simultaneously a history and analysis of the fishing industry, specifically farmed fish. Here’s some eye-opening knowledge in the chapter titled “Cod.”

In the period between 1962, when codfish stocks were still healthy and menu items like McDonald’s Filet-O-Fish sandwich were invented and produced at a cost of less than twenty-five cents a sandwich, and 1994, when most cod stocks were considered “collapsed” (collapsed generally being defined as a state where 90 percent or more of the historical population is gone), the United States, Canada, and the United Kingdom all went from being net exporters to net importers of not just cod, but all fish.

This week begins of my 2010 busy season. I worked a commercial and a corp already and will follow it up with prep for the series I start next week.

Today, I talk about pizza.

Pizza toppings are a vital part of creating a tasty pie.  My standard favourite is sausage (spicy), mushroom (butter of the vegetable kingdom) and green olives (no explanation necessary.)

However, that is not my only topping combo.  Introduced to me by my roommate, the feta cheese, tomato slices and bacon (crumble: trust me, I’m a scientist when it comes to pizza) is quickly working its way up the ranks.

And then there’s the Argentina classic: ham, cheese and egg.  You might think I’m crazy (you’d be wrong) but until you’ve had pizza in Argentina, you don’t even know what pizza is.  Seriously, if I had access to the pizza they make in Argentina I’d be a million times happier than I am now.  It’s not even about the toppings; it’s the entire unit.

The deep dish pizza from Uno’s (currently only in the states… lame) is another favourite of mine.
